Zucchini Bread

I told you on Monday when I posted our menu for this week that I also wanted to do some freezer cooking.  I had already moved frozen zucchini, squash and apples into the refrigerator the previous Saturday, so by late Monday evening I needed to do some baking! Nothing motivates me like a bowl full of thawed food in the fridge! ;} 

I made two batches of oatmeal squash cookies, one batch of apple muffins and a batch of zucchini bread.  The zucchini bread is a recipe I grew up with and have enjoyed for many years and I thought I'd share it with you because it is so quick and easy. 



Zucchini Bread

Ingredients:
3 eggs
1 c oil
2 c sugar
2 c grated or minced zucchini
3 t vanilla
1 t salt
¼ t soda
3 c flour
3 t cinnamon

Directions:
Beat eggs and add sugar, oil, vanilla and zucchini. Mix in flour and spices. Grease and flour two bread pans and pour dough into them. Bake at 350 F for about 1 hour. Use toothpick to check if done.

  1. The oatmeal squash cookies, apple muffins and zucchini bread all look delicious! I like the extra nutrition that is added by including extra fruit and vegetable ingredients in the baking. I also like the fact of making some of these baked goods ahead of time and storing in the freezer for unexpected company or for use for busy days.

    1. Thanks for stopping by & leaving a note. :) Freezer cooking healthy food (even the treats) is an extension of the joy I get from my garden & raising a happy healthy family. :D
