On the Menu This Week

For the last several years I have challenged myself to focus on using from my pantry and shop less... a Pantry Challenge.  With the end of February, this year's pantry challenge is complete but I have really enjoyed having a basic menu plan to guide me.  This year I decided to continue to make a month long menu, and be intentional about using garden produce and preserves from last season.

I am only planning two meals this week & will let the Friday - Sunday play out as it works for us since our schedule is a little up in the air for Easter yet.  How do you plan for a holiday that you don't know what the exact plan is?  Anyway, here is my plan for this week...

Meals:
Left overs!!! - somehow we have lots of left overs that need to be used up!
tatertot hotdish (corn, & mixed veggies)
cabbage rolls - didn't get made last week

Snack:
Zucchini Bread - made earlier this month
Craisin Hot Cross Buns (a Easter favorite of mine)
