On The Menu This Week

For the last several years I have challenged myself to focus on using from my pantry and shop less... a Panty Challenge.  With the end of February, this year's pantry challenge is complete but I have really enjoyed having a basic menu plan to guide me.  I have decided to continue to make a month long menu, and be intentional about using garden produce and preserves from last season.

Here is my plan for this week...

Here is what is on my menu this week...

Meals:
Sweet & Spicy Glazed Chicken (peach salsa or zucchini peach marmalade
Italian Shells (spaghetti sauce)
Chicken Taco soup (frozen corn)

Snack:
I plan on making several quick breads & muffins this week to put in the freezer for breakfasts, snacks & traveling this month.  I also intend to share some with friends experiencing medical trials and who could use a little love this week.

Super Moist Apple Muffins
Zucchini Bread
Oatmeal Squash Cookies
Rhubarb Bread
